"Treat yourself to one of
Linda Dick's sensational birds"
David Dempsey - Scotland on Sunday

For a number of years now we have been producing traditionally reared quality roasting chickens. They range from around 6 lbs to an enormous 15 lbs in weight (oven ready). We believe that the incredible flavour and tenderness of our birds is a result of being given time to mature slowly, dry plucked and then hung for a few days.

These chicks are only a few days old and are still at the cuddly stage. At this point the most important thing is to keep them warm and give them plenty of food and water, but they will soon be ready to enjoy the outdoor life.

These chickens are around seven weeks old. We get the chicks as day olds and grow them on slowly to allow them to mature; improving the flavour and texture of the finished bird.

These are some of our larger chickens - around sixteen to eighteen weeks old.

Whilst running around they can be quite vicious but once cooked they are indeed delicious!

This is one of our largest chickens about to be enjoyed. The flavour is such that it has simply been roasted for 20 minutes per pound @ 190 degrees Celsius - wrapped in tinfoil, then given a final 20 minutes
uncovered to give the skin a wonderfull crispness for those of us who like to eat the skin as well.

We started rearing these chickens so that we as a family could eat chicken which was full of flavour in its own right and which we knew had been naturally reared and had led a good life.

This still is, and always will be our philosophy.

"I could tell just from looking at it that it would be full of flavour,....it was stunning. The flesh was close to the bone so you could actually carve it properly."

Clarrissa Dickson Wright

"Nothing pleases me more than the prospect of a traditional, quality meal using a traditional, bird for the occasion. None could be better I believe, than one of those magnificent chickens from Linda Dick - specially reared for the occasion"

Sue Lawrence - Master Chef
